Cattle finished on grass have significantly higher levels of beta-carotene content than animals finished in a feedlot. In 1997, Alabama Agriculture Experiment Station reported findings in 100 grams of beef:

Cholesterol: About Good Fat
Current research shows that an increase in the ratio of Omega-3 and Omega-6 series of fatty acids in the human diet reduces the incidences of coronary heart diseases, some cancers and other related diseases.
Studies at Hillsborough Research Institute showed cattle that are grass-fed and finished on pasture had a ration of Omega-3 to Omega-6 series four times greater than beef cattle finished on feedlot diets. |

Grass-fed beef has 27% less fat than grain-fed beef.
